Last Bakeries before Covid19

Before this whole pandemic scare, I was intent to make it a thing to review bakeries and espresso joints. I visited two places before all restaurants were placed on shutdown--Rosalini's in Seattle (rosellinis.com) and Katya's Bakery in Everett (www.katyasbakery.com).

Rosalini's was a tiny little place, very cute but not really a place you would sit and take advantage of the WiFi. The case had a smaller selection of very tasty looking little goodies.

Now, I don't know I decided to review bakeries while on an athletic-type diet, so maybe it's good I've got to hold off for a minute... mostly sweet pastries and cookies here, which looked good but I had a simple croissant.

The highlight was definitely the coffee, which was Lighthouse Decaf blend. It's not easy finding good decaf espresso anywhere, so that will be my reason for returning to this little hole-in-the-wall. Very rich and flavorful, not to mention that they had hemp milk.

The second Cafe was Katya's Bakery, and I initially stopped in because I had heard restaurants were losing business and, the place being in my neighborhood, wanted to support the community in case no one wanted to venture out.

Boy, was I wrong! This place was so busy with in-house an to-gos, it was wonderful to watch. It's a beautiful little shop that specializes in European style food and good espresso. There was enough seating for a ten-top, as well as four other tables and a corner table with lounge chairs that I shared with an adorable Russian family.

Their pastry case is something to behold--everything from layered cakes to creme-filled horns to macarons to my favorites, Piroshkies!!

Wow! Of course, I was trying to be good, so I tried to just get an espresso and a plate of dumplings.... but then the baklava looked so good I had to try it... so in the end I probably should have just gotten the piroshky. I regret nothing!

The dumplings were potato and mushroom and were the creamiest, most delightful little lumps of deliciousness with a dollop of mild sour cream. The baklava was crispy and perfect, though I had to laugh at myself trying to eat it without making a huge mess.

It was a blessing to get to enjoy both of these shops before it was decided public dining areas should no longer be available to the public. I wish both of these placing luck in reopening when this whole mess passes. Slan!
